Bison – Lean and Flavorful Meat

Bison, also commonly known as buffalo, is an excellent protein source that is gaining popularity among the health-conscious people. It’s leaner than beef and has a richer flavor, making it an ideal choice for home cooking. In this recipe, we will be using bison meat to make a classic Shepherd’s Pie with a twist – stout beer!

What is Stout Beer?

Stout is a type of beer that is dark, rich, and full-bodied. It’s made using roasted barley, which gives it a distinct coffee-like flavor. The alcohol content in stout is usually higher than regular beer, and it’s often used in cooking to add depth and complexity to dishes.

The Recipe

To make the Bison Shepherd’s Pie, we will need the following ingredients:

  • 1 lb. ground bison
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 tbsp. tomato paste
  • 1 cup stout beer
  • 1 cup beef broth
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 4 large potatoes, peeled and diced
  • 1/2 cup milk
  • 4 tbsp. butter
  • Salt and pepper to taste

Let’s get started!

Instructions

  1. Preheat the oven to 375°F.
  2. In a large skillet, cook the ground bison over medium-high heat until browned. Drain the excess fat.
  3. Add the diced onion and minced garlic to the skillet. Cook for 2-3 minutes until the onion is translucent.
  4. Stir in the tomato paste, stout beer, and beef broth. Bring to a simmer and cook for 10 minutes until the sauce has thickened.
  5. Add the mixed vegetables to the skillet and stir well. Season with salt and pepper to taste.
  6. Meanwhile, in a separate pot, boil the diced potatoes until tender. Drain and add the milk and butter. Mash the potatoes until smooth.
  7. Transfer the bison mixture to a baking dish. Spread the mashed potatoes over the top of the bison mixture.
