Ingredients

  • 7 lbs of pale malt extract
  • 1 lb of crystal malt 40L
  • 0.5 lb of carapils malt
  • 1 oz of Cascade hops (bittering)
  • 1 oz of Amarillo hops (flavor)
  • 1 oz of Centennial hops (aroma)
  • 1 oz of Amarillo hops (dry hop)
  • 1 packet of American ale yeast
  • 2/3 cup of priming sugar

Instructions

Follow these simple steps to brew your very own La Nouvelle American Pale Ale:

  1. Heat 2.5 gallons of water in a large pot until it reaches 155°F (68°C).
  2. Add the crushed crystal malt and carapils malt into a muslin bag. Steep it in the pot for 30 minutes. Make sure to stir occasionally.
  3. Remove the bag and add the pale malt extract to the pot. Stir until fully dissolved.
  4. Bring the mixture to a boil and add the Cascade hops. Boil for 60 minutes.
  5. After 45 minutes, add the Amarillo hops. This will impart a wonderful flavor to the beer.
  6. After 58 minutes, add the Centennial hops. These hops will provide a pleasant aroma to your APA.
  7. Once the boil is complete, cool the mixture rapidly. You can use an ice bath or an immersion chiller to speed up the process.
  8. Transfer the cooled wort to a sanitized fermenter and add the American ale yeast.
  9. Seal the fermenter with an airlock and let it ferment at a temperature of around 68°F (20°C) for about a week.
  10. After fermentation, transfer the beer to a bottling bucket, adding the priming sugar to carbonate the beer.
  11. Bottle the beer and allow it to condition for at least two weeks before refrigerating.
