The Recipe


  • 15 lbs Maris Otter malt
  • 1 lb Crystal 60L malt
  • 1 lb Munich malt
  • 1 lb Wheat malt

  • 1 oz Chinook hops
  • 1 oz Amarillo hops
  • 2 packs American Ale yeast
  • 2 cups corn sugar (for priming)


  1. Mash the Maris Otter, Crystal 60L, Munich, and Wheat malts in 8 gallons of water at 152°F for 60 minutes.
  2. Sparge with 4 gallons of water at 170°F.
  3. Add Northern Brewer hops and boil for 60 minutes.
  4. Add Centennial hops and boil for an additional 30 minutes.
  5. Add Cascade hops and boil for an additional 10 minutes.
  6. Add Chinook and Amarillo hops and boil for an additional 5 minutes.
  7. Cool the wort and transfer it to a fermenter.
  8. Pitch the yeast and ferment for 2 weeks at room temperature.
  9. Bottle with priming sugar and age for at least 6 months.
